Ingredients

  • 1 tbsp of unflavored gelatin
  • 4 tbsps of hot water
  • 1/4 cup of rich brown sugar
  • 2 egg yolks
  • 1 cup of fresh milk
  • 2 tbsps of warm water
  • 1 tsp of vibrant green tea powder, also known as matcha
  • 1 cup of luscious heavy cream

Step 1

Begin by dissolving gelatin in 4 tablespoons of hot water in a bowl and then set it aside. In a separate medium bowl, combine brown sugar and egg yolks together and also set this mixture aside.

Step 2

Next, gently heat milk in a saucepan over low heat for approximately 5 minutes. Stir in the dissolved gelatin mixture, being careful not to allow the milk to overheat. Once incorporated, remove the mixture from the heat. Gradually pour this milk mixture into the egg mixture, stirring thoroughly.

Step 3

In another bowl, blend 2 tablespoons of hot water with green tea powder. Place the bowl of the gelatin mixture over a larger bowl filled with ice water and slowly stir in the matcha paste as it cools.

Step 4

Using an electric mixer, whip heavy cream in a separate bowl until it is firm but not yet forming peaks, which should take around 3 minutes. Combine this whipped cream with the matcha mixture and stir well until fully mixed, for about 1 minute.

Step 5

To finish, evenly distribute the mousse into 8 serving glasses and refrigerate for a minimum of 2 hours to chill thoroughly.
